
Bacon, egg & spinach quiche with caramelised onion

Ingredients

Caramelised onion
- 3 red onion
- 2 tbsp / 30 ml olive oil
- 2 tbsp / 30 ml balsamic vinegar
- 2 tbsp / 30 ml maple syrup
Bacon
- 400 g bacon
- 1 tbsp / 15 ml olive oil
Pastry
- 2 sheets / 100 g flaky puff pastry sheets optional - omit for healthier version
Ingredients
- 1 cup cheese grated
- 100 g feta cheese
- 1 bunch parsley fresh or dried
- 250 g cherry tomatoes
- 2 cups / 160 g baby spinach
Mixture
- ½ cup / 120 g tomato relish
- 9 eggs
- ¾ cup / 180 ml coconut cream
- ½ cup / 125 ml milk or plant-based milk
Instructions
Before you start
- Preheat the oven to 180 °C. Spray a baking dish with oil spray.
Cook caramelised onion
- Peel and thinly slice 3 red onion. Heat 2 tbsp olive oil in a pot on medium heat. Add the onions and cook for about 8 minutes, stirring occasionally, until golden. Add 2 tbsp balsamic vinegar, 2 tbsp maple syrup and cook a further 2 minutes until very soft. Season with salt and pepper. Set aside.
Cook bacon
- Meanwhile, roughly chop 400 g bacon. Heat 1 tbsp olive oil in a large frypan over high heat. Add the bacon and cook for 3-4 minutes, until golden and crisp then set aside on a paper-towel lined plate.
Prep pastry (if using)
- Line the prepared baking dish with 2 sheets flaky puff pastry sheets so that the edges fall over the sides.
Prep ingredients
- Grate 1 cup cheese. Crumble 100 g feta cheese. Roughly chop 1 bunch parsley (if using fresh). Slice 250 g cherry tomatoes in half. Roughly chop 2 cups baby spinach. Spread the base of the dish with ½ cup tomato relish. Add the bacon, onion and spinach in layers, reserving a little onion for the top.
Prep mixture
- In a large bowl, whisk 9 eggs, ¾ cup coconut cream and ½ cup milk until well combined. Brush the exposed pastry (if using) with a little of this mixture. Stir in the cheeses and parsley and season well with salt and pepper. Gently pour into the dish over the bacon, spinach and onion layers. Arrange the with cherry tomatoes on top, cut side facing up.
Cook quiche
- Bake in the lower half of the oven for 35 minutes or until the egg and pastry are cooked (if using).
To serve
- Divide the bacon, egg & spinach quiche with caramelised onion between plates. Top with extra tomato relish on top if desired.
