Baked veggie & beef porcupine meatballs with mozzarella & steamed greens

Equipment

  • 1 Steamer pot
  • 1 Large deep frypan with lid

Ingredients

Meabtalls

  • 1 egg
  • 1 brown onion
  • 1 zucchini
  • 1 carrot
  • ½ cup / 40 g baby spinach
  • 4 cloves garlic
  • 500 g beef mince
  • 125 g pre-cooked brown rice

Sauce

  • 420 g pasta sauce
  • 1 tbsp honey
  • 1 beef stock cube
  • 1 cup mozzarella cheese

Greens

  • 1 broccoli
  • 1 cup / 60 g green beans
  • 1 cup / 140 g frozen peas

Instructions

Before you start

  1. Preheat the oven to 200 °C fan bake. Line an oven tray with baking paper or spray a 12 cup muffin tray with oil spray. Bring a steamer pot of hot tap water to a boil.

Make meatballs

  1. Whisk 1 egg in a large bowl. Then add to the bowl as you go - peel and finely dice 1 brown onion. Grate 1 zucchini and 1 carrot. Finely chop ½ cup baby spinach. Peel and mince 4 cloves garlic. Then add 500 g beef mince and 125 g pre-cooked brown rice and combine well using clean damp hands.
    Tip: Or add all the ingredients to a food processor and blend until just combined.

Cook meatballs

  1. Then, using a ¼ measuring cup, scoop the mixture, shape it into meatballs and place them on the prepared oven tray or muffin tin. Bake the meatballs in the oven for 15 minutes, or until golden and cooked through.

Make sauce

  1. When the meatballs have 5 minutes of cooking time left, add 420 g pasta sauce1 tbsp honey, 1 beef stock cube and ½ cup of water into a large deep frypan over medium-high heat. Season with salt and pepper and bring to a boil, then reduce heat to low and simmer, for 5 minutes. Add the meatballs and gently stir to combine, then grate over 1 cup mozzarella cheese. Place a lid on and cook for 2-3 minutes or until the cheese is melted.

Steam greens

  1. While the sauce is simmering slice 1 broccoli into florets. Add the broccoli, 1 cup green beans and 1 cup frozen peas to the steamer pot of boiling water and cook for 4 minutes or until tender. Season with salt and pepper.

To serve

  1. Divide the baked veggie & beef porcupine meatballs with mozzarella and steamed greens between plates.
