Beef & caramelised onion on ciabatta with sweet potato chips & creamy pesto

Ingredients

Chips

  • 600 grams Sweet potato
  • 2 tsps Olive oil

Caramelised onions

  • 2 Brown onion
  • 2 tsps Olive oil
  • 2 tbsps Balsamic vinegar
  • 2 tbsps Maple syrup

Buns

  • 4 Buns ciabatta

Beef

  • 500 grams Beef stirfry
  • 2 tsps Italian herbs
  • 2 tsps Olive oil

Pesto & toppings

  • 80 grams Basil pesto
  • 2 tbsps Mayonnaise
  • 2 Tomato
  • 100 grams Baby spinach

Instructions

Prep and cook chips

  1. Preheat oven to 240°C or 220°C fan-forced. Line a baking tray with baking paper. Cut unpeeled sweet potato into chips. Place chips on the prepared oven tray. Drizzle with oil, season with salt and toss to coat. Bake until tender, 20-25 mins. TIP: If your oven tray is crowded, divide the chips between two trays.

Make caramelised onions

  1. Meanwhile, peel and thinly slice the brown onion. Heat the oil in a large frypan on medium-high heat. Cook onion, stirring regularly, for 5-6 mins, or until softened. Reduce heat to medium. Add the balsamic vinegar, maple syrup and 2 tbsps of water, and mix well. Cook until dark and sticky, 3-5 mins. Transfer to a small bowl. Reserve the pan.

Cook buns

  1. When the chips have 5 mins cooking time remaining, place the ciabatta buns directly on a wire rack in the oven. Bake until heated through, 5 mins. Then slice each ciabatta bun in half.

Cook beef

  1. Season the beef with Italian herbs and a good pinch of salt and pepper. Heat the oil in the reserved frypan on high heat. When oil is hot, cook beef in batches (to keep them tender!) tossing, until browned and cooked through, 1-2 mins. Then add the caramelised onion back into the pan and quickly toss with the beef to combine.

Make creamy pesto and toppings

  1. In a small bowl combine pesto and mayonnaise. Then spread the buns with creamy pesto. Thinly slice the tomatoes. Top the buns with the spinach, beef and caramelised onion and tomato slices.

To serve

  1. Divide the beef and caramelised onion on ciabatta with creamy pesto between plates. Serve with sweet potato fries and any remaining creamy pesto on the side.
