
Beef & onion gravy with creamy potato & pea mash

Ingredients
Mash
- 400 grams Potatoes
- 1 cup Frozen peas
- 60 pls Milk
Beef
- 2 tsps Olive oil
- 450 grams Beef rump steak Stirfry
Gravy
- 2 Brown onion
- 2 Carrot
- 2 cloves Garlic
- 2 tsps Olive oil
- 1 tbsp Flour
- 250 mls Beef stock
- 1 tbsp Worcestershire sauce
Instructions
Make mash
- Bring a steamer pot of water to a boil. Peel the potatoes and cut them into chunks. Put the potato in the steamer pot of boiling water. Reduce the heat to medium and cook for 10 mins. Then add the peas and cook for 2 mins, or until the potato is tender. Drain water and transfer veggies into the pot. Mash the potato and peas until the potato is smooth. Add milk and stir until combined. Taste, then season with salt and pepper. Cover to keep warm.
Cook beef
- Meanwhile, separate the beef stir-fry. Heat the oil in a large frypan over high heat until very hot (beef stir-fry is best with hot, fast cooking). Cook the beef, stirring, for 1-2 mins until browned. Remove from the pan with a slotted spoon, reserving the oil in the pan.
Start gravy
- Peel and thinly slice the onion. Peel and thinly slice the carrot at an angle. Peel and mince the garlic. Return the pan to medium-high heat and add the oil. Cook the onion, carrot and garlic, stirring regularly, for 4 mins, or until the onion is golden and softened. Sprinkle over flour and cook, stirring constantly, for 1 min or until lightly browned.
Finish gravy
- Gradually add the stock, stirring constantly to prevent lumps from forming and bring to a boil. Stir in the Worcestershire sauce, reduce the heat to medium and cook, stirring regularly, for 3-4 mins, until thickened and the carrot is tender. Add the beef and any resting juices to the gravy and cook, stirring, for 30 secs, or until heated through. Taste, then season with salt and pepper.
To serve
- Divide the beef and onion gravy between plates with creamy potato and pea mash on the side.
