Cheesy beef & spaghetti bolognese with broccoli

Equipment

Ingredients

Spaghetti

  • 250 g spaghetti or gluten-free spaghetti
  • 1 tbsp / 15 ml olive oil

Beef

  • 1 onion
  • 2 cloves garlic
  • 1 carrot
  • 1 zucchini
  • 1 tbsp / 15 ml olive oil
  • 600 g beef mince

Sauce

  • 400 g crushed tomatoes
  • 2 tbsp Italian herbs
  • 1 tsp honey
  • 1 cube beef stock
  • 1 cup / 80 g baby spinach
  • ½ cup / 50 g mozzarella cheese

Broccoli

  • 1 broccoli

To serve

  • 1 bunch parsley optional

Instructions

Before you start

  1. Bring a large pot of salted hot tap water to a boil. Bring a steamer pot of hot tap water to a boil.

Cook spaghetti

  1. Add 250 g spaghetti to the pot of salted boiling water and cook according to the packet directions or until al dente. Reserve 60 ml or ¼ cup of the pasta water, then drain. Toss 1 tbsp olive oil through the pasta and set aside with lid on.

Cook beef

  1. Peel and finely dice 1 onion. Peel and mince 2 cloves garlic. Peel and grate 1 carrot. Grate 1 zucchini. Heat 1 tbsp olive oil in a large frypan on medium-high heat. Add the onion and garlic and cook for 1 minute. Then add the carrot, zucchini and 600 g beef mince, breaking up the lumps with a spoon, and cook for 4 minutes.

Cook bolognese sauce

  1. Then add 400 g crushed tomatoes, 2 tbsp Italian herbs, 1 tsp honey, 1 cube beef stock and the reserved pasta water. Cook for 5 minutes, or until slightly reduced. Then stir through 1 cup baby spinach. Grate over ½ cup mozzarella cheese, place lid on and cook 2-3 minutes, or until the cheese is melted.

Cook broccoli

  1. Meanwhile, cut 1 broccoli into florets. Add the broccoli to the steamer pot of boiling water and cook for 5 minutes, or until cooked to your liking. Finely slice 1 bunch parsley, discarding the stems.

To serve

  1. Divide the cheesy spaghetti and beef bolognese between plates. Garnish with the parsley and serve the broccoli on the side.
