Cheesy gnocchi gratin with cauli & butternut pumpkin

Ingredients

  • oil spray

Veggies

  • 600 g butternut pumpkin
  • 1 cauliflower
  • 1 leek
  • 1 red onion
  • 1 tbsp / 1 tbsp olive oil

Gnocchi

  • 1 tbsp / 1 tbsp olive oil
  • 500 g gnocchi or gluten-free gnocchi
  • 1 cup / 1 cup baby spinach

Sauce

  • 1 tbsp / 1 tbsp olive oil
  • 2 tbsp / 26 g flour or gluten-free flour
  • 1 cup / 250 ml milk or plant-based milk
  • ½ cup / 50 g parmesan cheese grated

To Serve

  • 50 g feta cheese

Instructions

Before you start

  1. Preheat oven to 220 °C or 200 °C fan bake. Line an oven tray with baking paper. Spray a baking dish with oil spray.

Cook veggies

  1. Peel and dice 600 g butternut pumpkin into 1cm cubes. Cut 1 cauliflower into small florets. Slice 1 leek in half lengthwise, then thinly slice. Peel and finely slice 1 red onion. Add the pumpkin, cauliflower, leek and onion to the prepared oven tray. Drizzle with 1 tbsp olive oil and season with salt and pepper, toss to combine. Bake for 12-15 minutes, or until tender.

Cook gnocchi

  1. Meanwhile, heat 1 tbsp olive oil in a large frypan on high heat. Add 500 g gnocchi and cook according to packet directions. When the gnocchi is cooked add 1 cup baby spinach and toss to wilt.

Make sauce

  1. Heat 1 tbsp olive oil in a medium-sized pot over medium heat. Add 2 tbsp flour , whisking continuously to combine and gradually add 1 cup milk, until a smooth consistency is reached. Then grate in ½ cup parmesan cheese, and stir until the cheese is melted and well combined.

Bake gratin

  1. Once the veggies are finished cooking, carefully add them to the prepared baking dish along with the drained gnocchi and sauce. Stir gently to combine, then crumble over 50 g feta cheeseBake in the oven for 5-10 minutes, until the top is golden.

To serve

  1. Divide the cheesy gnocchi gratin with cauliflower & butternut pumpkin between plates.
