Cheesy ham & veggie quiche with salad

Ingredients

  • oil spray

Batter

  • 1 brown onion
  • 2 zucchini
  • 1 cup / 100 g cheese
  • 300 g ham
  • 400 g corn kernels
  • 8 egg
  • cup / 80 ml milk
  • ½ cup / 125 ml sour cream
  • cup / 54 g flour or gluten-free flour
  • 1 tsp baking powder

Salad

  • 1 tbsp / 15 ml olive oil
  • 1 tbsp / 15 ml balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 cos lettuce
  • 2 tomato

Instructions

Before you start

  1. Preheat oven to 200 °C or 180 °C fan bake. Spray a large baking dish with oil spray.

Make batter

  1. Peel and finely dice 1 brown onion. Grate 2 zucchini and 1 cup cheese. Chop 300 g ham. Drain 400 g corn kernels. In a large bowl whisk 8 egg, ⅓ cup milk and ½ cup sour cream. Sift in ⅓ cup flour and 1 tsp baking powder and whisk until smooth. Add in the onion, zucchini, ham, corn and half of the cheese and mix to combine. Season with salt and pepper.

Cook quiche

  1. Pour mixture into prepared baking dish. Sprinkle over the remaining cheese. Bake for about 40 minutes, until golden and the egg is cooked.

Make salad

  1. In a large bowl whisk together 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp Dijon mustard and 1 tsp honey. Season with salt and pepper. Separate 1 cos lettuce leaves and slice 2 tomato into wedges. Add to bowl with dressing, and toss to combine.

To serve

  1. Slice the cheesy ham & veggie quiche and divide between plates. Serve with the salad on the side. Squeeze over your favourite sauce.
