Creamy chicken & leek filo pie with greens

Equipment

  • 1 Baking dish
  • 1 Steamer pot
  • 1 Large frypan

Ingredients

  • oil spray
  • 4 sheets / 96 g filo pastry optional - mashed potato top for gluten-free or healthier option

Filling

  • 1 carrot
  • 1 zucchini
  • 1 leek
  • 600 g chicken thighs skinless, boneless
  • 1 tbsp / 15 ml olive oil
  • 1 tbsp Moroccan seasoning
  • ½ cup / 125 ml milk or plant-based milk
  • ½ cup / 125 g sour cream
  • oil spray

Greens

  • 1 broccoli
  • 1 cup / 140 g frozen peas

Instructions

Before you start

  1. Preheat oven to 220°C or 200°C fan bake. Bring a steamer pot of hot tap water to the boil. Spray a baking dish with oil spray. Set 4 sheets filo pastry aside to defrost (if using).

Prep filling

  1. Peel and grate 1 carrot. Grate 1 zucchini. Slice 1 leek in half lengthways, then thinly slice. Pat 600 g chicken thighs dry and dice into bite-sized pieces.

Cook filling

  1. Heat 1 tbsp olive oil in a large frypan on medium-high heat. Cook carrot, zucchini, leek and chicken for about 6 minutes, until starting to brown. Add 1 tbsp Moroccan seasoning and ½ cup milk and cook 2-3 minutes, until veggies are soft. Remove from heat and stir through ½ cup sour cream. Season to taste with salt and pepper.

Cook pie

  1. Spoon the chicken filling into the base of the prepared baking dish. Spray filo pastry sheets with oil spray, scrunch softly and place on the top of the pie filling. Repeat with the remaining filo pastry, until the filling is completely covered. Bake for 15-20 minutes or until the filo is golden and crispy.

Cook greens

  1. Meanwhile, cut 1 broccoli into florets. Add broccoli and 1 cup frozen peas to the steamer pot of boiling water and cook for 4 minutes, until tender. Season to taste with salt and pepper.

To serve

  1. Divide the creamy chicken and leek filo pie with greens on the side.
