Crispy parmesan pork fillets with garlic roasties, greens & aioli

Equipment

  • 3 Shallow bowls
  • 1 Large frypan

Ingredients

Roasties

  • 400 g potatoes
  • 2 carrot
  • 4 cloves garlic
  • 1 tbsp / 15 ml olive oil

Pork

  • ¼ cup / 52 g flour or gluten-free flour
  • 1 egg
  • 50 g parmesan cheese
  • ½ cup / 30 g panko breadcrumbs or gluten-free breadcrumbs
  • 500 g pork sirloin steaks
  • 1 tbsp / 15 ml olive oil

Greens

  • 1 broccoli

Serve

  • ¼ cup / 80 g aioli sauce

Instructions

Before you start

  1. Preheat the oven to 220 °C fan bake. Line an oven tray with baking paper. Bring a steamer pot of water to a boil.

Cook roasties

  1. Dice the unpeeled 400 g potatoes and 2 carrot into 2cm cubes. Peel and mince 4 cloves garlic. Put the potato, carrot and garlic on the prepared tray. Drizzle with 1 tbsp olive oil, season with salt and pepper and toss to coat. Bake for 25 minutes, or until golden and tender.

Prep pork

  1. Put ¼ cup flour and a pinch of salt in a shallow bowl. Whisk 1 egg in a separate shallow bowl. Finely grate 50 g parmesan cheese into a third shallow bowl, add ½ cup panko breadcrumbs and stir to combine. Dust 500 g pork sirloin steaks with the flour, shake off the excess, dip in the egg and coat in the breadcrumb mixture.

Cook pork

  1. Heat 1 tbsp olive oil in a large frypan over medium heat. Cook the pork for 4-5 minutes on each side, or until golden and cooked through. Drain on a wire rack set over a paper towel (this will keep the crumb crisp). Lightly season with salt and pepper.
    Tip: The pork steaks will be cooked to blush pink, which is desired to ensure the meat is tender and juicy.

Cook greens

  1. Trim 1 broccoli and halve any thicker stems lengthwise. Add the broccoli to the steamer pot of boiling water, and cook for 4 minutes.

To serve

  1. Divide the crispy parmesan pork fillets, garlic roasties and greens between plates. Serve with the aioli on the side for dipping.
