Grilled pork with corn & tomato salsa & potato roasties

Ingredients

Roasties

  • 400 grams Potatoes
  • 1 Oil spray
  • 2 tsps Italian herbs

Pork

  • 450 grams Pork tenderloin steaks
  • 1 Olive oil

Corn

  • 400 grams Corn
  • 2 cloves Garlic

Salsa

  • 2 Tomato
  • 1 bunch Parsley
  • 2 Cucumber
  • 2 tbsps Jalapeño pepper optional
  • 2 tsps Italian herbs
  • 2 tsps Balsamic vinegar

Instructions

Cook roasties

  1. Preheat the oven to 220°C, fan-forced. Line an oven tray with baking paper. Dice the unpeeled potatoes into 2cm-thick cubes. Put the potato on the lined tray, spray with oil (or drizzle with oil), sprinkle with the Italian herbs and toss to coat. Roast for 25 mins or until golden and tender.

Cook pork

  1. Meanwhile, heat a frypan or barbecue over high heat until hot. Drizzle the pork with oil and season with salt and pepper. Cook the pork for 4-5 mins on each side until golden and cooked through (pork will be cooked to blush pink, which ensures it is tender and juicy). Remove from the pan and rest for 4 mins.

Char corn

  1. While the pork is cooking, drain and rinse the corn. Peel and mince the garlic. Heat a large frypan on high heat, then add the corn and garlic. Stir to combine then leave to char for 2-3 mins. Stir and leave to char again. Continue this process until the corn is tender and nicely charred, about 8 mins. Set aside to cool for a few mins.

Make salsa

  1. Roughly chop the tomato. Finely chop the parsley leaves, discarding the stems. Slice the cucumber in half lengthways, scoop out the seeds and then dice. Combine the tomato, parsley, cucumber, jalapeno (if using), Italian herbs, cooled corn and garlic and the balsamic vinegar in a large bowl. Taste, then season with salt and pepper.

To serve

  1. Divide the grilled pork, corn & tomato salsa and potato roasties between plates. Drizzle the pork with any resting juices, if desired or your favourite sauce.
