Make dressing

  1. Finely grate ¼ cup parmesan cheese into a large bowl. Add 1 tsp apple cider vinegar, 1 tsp olive oil, and ¼ cup mayonnaise and whisk to combine. Add a splash of water until slightly runny. (You could also blend this for a really smooth dressing).

Make salad

  1. Roughly chop 1 baby cos lettuce. Peel and dice 1 avocado into 1cm cubes. Add the lettuce, avocado, potatoes, beans and haloumi to the bowl with the dressing. Toss to coat and season with salt and pepper.
