Savoury beef, spinach & ricotta filo pie

Equipment

Ingredients

  • oil spray

Mince Filling

  • 1 brown onion
  • 2 carrots
  • 1 tbsp / 15 ml olive oil
  • 600 g beef mince
  • 1 cube beef stock
  • ¼ cup / 70 g tomato paste
  • 1 cup / 140 g peas
  • 1 cup / 150 g frozen corn
  • 2 tbsp / 26 g flour or gluten-free flour

Cheese filling

  • 4 cups / 320 baby spinach
  • 1 cup / 250 g ricotta
  • 1 cup cheese grated

Topping

  • oil spray
  • 4 sheets / 96 g filo pastry

Instructions

Before you start

  1. Preheat the oven to 180 °C fan bake. Spray a baking dish with oil spray.

Start mince filling

  1. Peel and finely slice 1 brown onion. Peel and finely dice 2 carrots. Heat 1 tbsp olive oil in a large frypan over medium heat. Add the onion and carrots and cook for 2 minutes. Add 600 g beef mince and cook for 3-4 minutes, breaking up the lumps with a spoon.

Finish mince filling

  1. Then crumble in 1 cube beef stock, ¼ cup tomato paste, 1 cup peas, 1 cup frozen corn and season with salt and pepper. Stir in 2 tbsp flour. Add 250 ml or 1 cup of water and cook for 3-4 minutes, until thickened.

Make cheese filling

  1. Meanwhile, place 4 cups baby spinach in a large microwave-proof bowl and microwave for 2 minutes. Transfer to a sieve or tea towel and squeeze out the excess water. Transfer the spinach back to the bowl, add 1 cup ricotta and grate in 1 cup cheese. Season with salt and pepper and stir to combine.

Make pie

  1. Spoon the mince filling into the base of and out to the edges of the prepared baking dish. Spoon the cheese and spinach filling over the mince filling and spread out to the edges. Spray a sheet of filo with oil spray, scrunch softly and place on the top of the pie filling. Repeat with the remaining filo until the filling is completely covered. Bake for 15-20 minutes or until the filo pastry is golden and crispy.

To serve

  1. Divide the savoury beef, spinach & ricotta filo pie between plates.
