Alfredo, beef & spaghetti pasta bake with mozzarella cheese

Ingredients

  • 1 Oil spray
  • 2 Brown onion
  • 4 cloves Garlic
  • 1 Capsicum red
  • 100 grams Parmesan cheese grated
  • 2 bunches Parsley
  • 2 tsp Olive oil first
  • 450 grams Beef mince premium
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 tsp Cajun seasoning
  • 2 tsp Italian herbs
  • 400 grams Crushed tomatoes
  • 200 grams Spaghetti
  • 2 tbsp Olive oil second
  • 1 tbsp Flour
  • 250 mls Coconut cream
  • 50 grams Mozzarella cheese grated

Instructions

PREP INGREDIENTS

  • Bring a large steamer pot of salted water to the boil. Spray a baking dish with oil and set aside. Peel and finely slice the onion. Peel and mince the garlic. Finely dice the capsicum. Grate the parmesan cheese. Roughly chop the parsley.

COOK BEEF

  • Heat the first measure of oil in a large frypan over medium-high heat. Add the onion and half the garlic and cook for 2-3 mins, until softened. Then add the beef and cook for a further 3-4 mins, until browned, then stir in garlic powder, onion powder, cajun seasoning, Italian herbs and capsicum. Then add the tomatoes and cook uncovered for 5-8 mins, until liquid is reduced.

COOK THE PASTA

  • Preheat the oven to 180°C fan bake. Meanwhile, add the spaghetti to the pot of boiling water and cook according to packet directions. Drain and pour into the prepared baking dish.

MAKE ALFREDO SAUCE

  • Heat the second measure of oil in a small pot over medium heat. Add the garlic and flour and cook for 1 min. Then slowly whisk in the coconut cream and parmesan cheese, stirring to combine. Cook, while stirring, for 3-4 mins, until the sauce thickens, then season to taste with salt and pepper.

BAKE BEEF & SPAGHETTI

  • Pour the alfredo sauce over the pasta in the baking dish, then evenly spoon over the beef mixture. Grate the mozzarella cheese on top and sprinkle with parsley. Then bake in the oven for 15 mins, or until golden and the cheese is melted.

TO SERVE

  • Divide the Alfredo, beef & spaghetti pasta bake with mozzarella cheese between plates.
