Beef burger & stir-fry rice fusion with burger sauce

1Brown onion

2Gherkins
½Green cabbage
2tspOlive oil
500gramsBeef mince
50gramsTomato paste
60mlsGherkin juice
2tbspsSoy sauce
250gramsBasmati ricepre-cooked or instant
50gramsCheesegrated
40mlsBurger sauce
Instructions
PREP INGREDIENTS
Peel and finely dice the onion. Peel and mince the garlic. Peel and grate the carrot. Finely dice the bacon. Finely dice the gherkin. Finely shred the cabbage.
COOK MINCE
Heat the oil in a frypan on medium heat. Add onions, garlic, carrot and bacon and cook for 4-5 mins, until soft. Add beef and season with salt and pepper. Cook for 5-6 mins, breaking it up with a wooden, until browned.
COOK STIR-FRY
Add tomato paste, gherkin, gherkin juice measure (if using) and soy sauce. Stir so the meat is coated. Add the cabbage and toss through the meat. Cook for about 3 mins, until the cabbage is slightly wilted. Then add the cooked rice, toss to combine and cook until heated through. Season with salt and pepper.
TO SERVE
Divide the beef burger & stir-fry rice between plates. Grate over the cheese and drizzle with the burger sauce.
