Beef sloppy joes on ciabatta with cheese & guacamole

1tbspWorcestershire sauce

4Buns ciabatta
50gramsCheesegrated

Instructions
PREP INGREDIENTS
Peel and mince the garlic. Peel and finely dice the onion.
COOK BEEF
Heat the first measure of oil in a large frypan on medium-high heat. Add onion and garlic and and cook for about 2 mins, until fragrant. Add beef mince, break it up with a spatula and cook a further 3-4 mins, until browned. Then add tomatoes, corn, spinach, Worcestershire sauce and tomato sauce and bring to a simmer. Reduce heat to medium and cook for about 5 mins, until the sauce has thickened.
GRILL SLOPPY JOES
Preheat the oven on grill function. Halve the ciabattas horizontally. Grate the cheese. Place the ciabattas on a baking tray cut side up. Once the beef is cooked, divide it between the ciabattas. Sprinkle over the grated cheese. Place on the top shelf of your grill for 3-4 mins, until the cheese is nicely melted.
MAKE GUACAMOLE
Meanwhile, slice the avocado in half lengthways. Once you reach the stone turn the avocado around to cut it in half. Twist each half and pull it apart. Remove the stone then scoop out the flesh into a bowl. Add a squeeze of lime juice the second measure of oil and a pinch of salt and pepper and mash roughly with the back of a fork. Taste and add more lime if needed.
TO SERVE
Divide the hot beef sloppy joes on ciabatta with cheese between plates. Top with the guacamole.
