Creamy pork & pappardelle pasta with parmesan & steamed greens

Instructions
Before you start
Bring a steamer pot of hot tap water to a boil. Bring a pot of salted hot tap water to a boil.
Cook pork & veggies
Peel and mince 2 cloves garlic. Slice 1 leek in half lengthwise, wash to remove any dirt then thinly slice. Heat 1 tbsp olive oil in the frypan over medium heat. Cook the garlic and leek, stirring regularly, for 3 minutes or until softened. Add 600 g pork mince and cook for 4 minutes, breaking up the lumps with a spoon.
Make sauce
Crumble in 1 cube chicken stock and add 400 ml coconut cream to the pork mixture, season with salt and pepper and bring to a simmer. Cook, stirring regularly, for 3 minutes or until the sauce is slightly reduced. Grate in 1 lemon zest then slice it into wedges and set them aside.
Cook pasta
Add 400 g pappardelle pasta to the pot of boiling water and cook according to packet directions. Drain the pasta.
Cook greens
Meanwhile, slice 1 broccoli into small florets. Add the broccoli and 1 cup frozen green beans to the steamer pot of boiling water. Cook for 3-4 minutes or until tender and cooked to your liking.
To finish
Add the pasta and 1 cup baby spinach to the pork and sauce mixture, reduce the heat to medium-low and cook, stirring gently, for 1 minute or until the spinach is wilted. Grate over half of the ½ cup parmesan cheese and stir to combine, then remove from heat.
To serve
Divide the creamy pork with pappardelle pasta between plates. Serve the steamed greens and lemon slices on the side for squeezing. Grate over the remaining cheese.
