Instructions
COOK POTATO
Bring a large steamer pot of water to a boil. Halve the larger unpeeled potatoes, so they're all a similar size. Put the potatoes in the steamer pot of boiling water and cook for 10 mins, or until almost tender.
PREP INGREDIENTS & MAKE SAUCE
Meanwhile, roughly chop the broccoli stem, then cut the head into small florets. Trim the beans. Peel and mince the garlic. Combine the maple syrup, apple cider vinegar, tomato sauce and honey in a small bowl and season with salt and pepper.
COOK PORK
Season the pork with salt and pepper. Heat the first measure of oil in a medium frypan over medium-high heat. Cook the pork for 3 mins on each side, or until cooked through. Remove from the pan and rest for 4 mins. Reserve the pan.
STEAM GREENS
When the potato has been cooking for 10 mins, add the broccoli and beans to the potato and cook for a further 3 mins or until the potato and greens are tender. Drain the water from the steamer pot and add the second measure of oil and half of the garlic, stirring, for 30 secs or until fragrant. Then add the potato and greens and cook, tossing occasionally, for 2 minutes or until coated.
MAKE DRIZZLE
Heat the third measure of oil to the reserved frypan over low heat. Add the remaining garlic to the pan and cook for 1 minute, until fragrant. Then add the barbecue sauce and bring to a simmer. Cook for 2-3 mins until slightly thickened. Stir in any pork resting juices. Remove from the heat.
TO SERVE
Divide the barbecue pork steaks and garlic potato and greens between plates. Drizzle over the barbecue sauce.
