Preheat the oven to 180 °C. Line a baking dish with baking paper.
Wet mixture
Roughly chop ½ cup dates. Add the dates, ½ cup coconut oil and ¼ cup maple syrup to a small pot on medium-low heat and cook for 5 minutes, or until the oil is melted and the dates have softened. Add 1 tsp vanilla extract then carefully blend or mash the mixture until smooth and well combined.
Dry mixture
In a large bowl combine 3 cups post workout mix, 1 cup oats, ½ cup desiccated coconut, 1 tsp baking powder and ½ tsp cinnamon.
Combine mixtures
Pour the wet mixture into the bowl with the dry mixture and stir until well combined.
Bake slice
Transfer the mixture into the prepared baking dish and evenly spread, using a spatula to flatten and lightly press down. Bake in the oven for 18-20 minutes or until lightly golden. Allow to cool before slicing.
