Healthier creamy rice pudding

Equipment

  • 1 solid steam container

Ingredients

  • oil spray

Milke & honey

  • 4 cups milk or dairy-free milk
  • cup honey or maple syrup

Pudding

  • ¾ cup medium grain white rice
  • ½ cup sultanas or raisins
  • 2 tsp vanilla extract
  • ¾ tsp cinnamon
  • ½ cup coconut cream or dairy cream

Instructions

Before you start

  • Preheat the Combi steam oven on fan bake 170 °C and level 3 or 70% steam. Spray a solid steam container with oil spray.

Prepare pudding

  • Combine 4 cups milk, ⅓ cup honey, ¾ cup medium grain white rice, ½ cup sultanas, 2 tsp vanilla extract and ¾ tsp cinnamon in the prepared solid steam container.

Steam pudding

  • Place the pudding into the preheated steam oven and cook for 35 minutes, then remove the steam and cook at 170 °C a further 10 minutes.

To finish

  • Remove from the oven and stir through ½ cup coconut cream.

To serve

  • Divide between bowls and serve as is or with a drizzle of honey.
