Italian sausages in tomato sauce & cheese with spinach mash

Instructions
Before you start
Bring a steamer pot of hot tap water to a boil.
Spinach mash
Peel 800 g potatoes and dice them into small cubes. Roughly chop 1 cup baby spinach. Add the potato to the steamer pot of boiling water and cook for 12-15 minutes, until tender. When the potatoes have 2 minutes of cooking time remaining add the spinach. Remove from heat, drain and transfer the potatoes to the bottom pot. Add 1 tbsp olive oil and ¼ cup milk and season with salt and pepper and mash until smooth. Cover to keep warm.
Cook sausages
Meanwhile, heat 1 tbsp olive oil in a large frypan on medium-high heat. Add 600 g beef sausages and cook for 5-8 minutes, until cooked through and golden. Place sausages on a plate to cool slightly. Reserve the frypan.
Make sauce
Peel and finely dice 1 brown onion and 1 carrot. Peel and mince 2 cloves garlic. Heat 1 tbsp olive oil in the reserved frypan on medium heat. Add the onion, garlic and carrot and cook for 2-3 minutes, until the onion softens. Add 1 tsp Italian herbs, 400 g crushed Italian tomatoes, 1 tsp honey and crumble in 1 cube beef stock. Stir to combine. Cook for 4-5 minutes, until thickened and the carrot is tender.
To finish
Meanwhile, slice the sausages in half lengthwise (or slice them into bite-sized pieces for kids). Return them to the pan with the sauce and grate over ½ cup cheese. Continue to cook with a lid on for 1-2 minutes, or until the cheese is melted.
To serve
Divide the spinach mash between plates and top with the Italian sausages in tomato sauce and cheese.
