Instructions
PREP INGREDIENTS
Preheat the oven to 200°C, fan-forced. Thinly slice the cheese and tomato. Peel and roughly grate the beetroot. Peel and mince the garlic.
MAKE BEET RELISH
Heat the first measure of oil in a small pot over medium heat. Cook the beetroot, stirring, for 5 mins or until softened. Add water, honey and balsamic vinegar, reduce the heat to medium-low and cook, stirring occasionally, for 5 mins or until slightly sticky. Remove the pan from the heat. Taste, then season with salt and pepper.
MAKE & COOK PATTIES
While the beetroot relish is cooking, combine the garlic, beef mince and barbecue seasoning in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into walnut-sized balls. Heat the second measure of oil in a medium frypan over medium-high heat. Cook the patties for 3-4 mins each side until golden. Then put the cheese onto the patties and cook, covered, for a further 1 min or until the cheese is melted. Remove the pan from the heat and keep covered.
TOAST BUNS & COOK EGGS
Halve the buns through the middle. Put on an oven tray, cut side up, and bake for 6 mins or until lightly toasted. Heat the third measure of oil in a separate medium frypan over medium heat. Crack eggs into the pan and cook for 3-4 mins until just set, or until cooked to your liking.
ASSEMBLE BURGERS
Spread the bun bases with some of the beetroot relish. Fill with the tomato, patties, egg and some of the mixed green salad, then sandwich with the roll tops.
TO SERVE
Serve the Kiwi beef burger with beet relish and the remaining mixed green salad and beet relish on the side. (Drizzle the remaining salad with a little balsamic vinegar if desired, and season with salt and pepper).
