Preheat combi steam oven to 180 °C fan bake with 50% steam or level 2 steam. Spray a universal tray or baking dish with oil spray.
Vegetables
Adding to the prepared universal tray as you go, peel and dice 700 g potatoes into 5cm pieces, peel and quarter 3 carrots and 2 red onions, and peel and mince 2 cloves garlic. Drizzle over 2 tbsp olive oil, add 2 tsp dried thyme, 1 tsp dried oregano, ¼ tsp pepper and 1 tsp salt. Toss to coat. Arrange 600 g sausages over the top of the vegetables.
Gravy
In a medium-sized bowl add 2 tbsp butter, 2 ½ tbsp flour, and 2 cups beef stock and stir until combined. Pour down the side of the pan (don't pour over the sausages or veggies).Optional: Spray sausages with oil spray
Bake
Place in the oven on shelf level 2 and bake for 25 minutes. Turn sausages. Spray with oil (optional) then bake for a further 20 minutes or until sausages are browned and potatoes are tender.
To serve
Divide the sausages and vegetables with gravy between plates, and garnish with 1 bunch fresh thyme leaves if desired.
