Instructions
PREP INGREDIENTS
Bring a medium pot of salted water to the boil for the pasta. Using a sharp knife, trim the top and bottom of the orange, then slice the skin away from the flesh, removing any remaining white pith. Slice the orange. Thinly slice the onion and radish. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Coarsely grate the cheese. Roughly chop the parsley leaves, discarding the stems.
COOK PASTA & PREP INGREDIENTS
Cook the pasta in the pot of boiling water according to packet directions or until al dente. Reserve the listed measure of cooking water, then drain the pasta.
MAKE CHEESE SAUCE
Heat the oil in a large pot over medium heat. Add flour and cook, stirring, for 2 mins or until foaming. Gradually add reserved cooking water then milk, whisking constantly to prevent lumps from forming. Bring to a simmer and cook, stirring, for 4 mins, or until thickened. Add cheese and Dijon mustard and stir for 1 min or until cheese is melted.
COMBINE PASTA & SAUCE
Add the pasta to the cheese sauce and stir to combine. Taste, then season with salt and pepper.
MAKE SALAD
Combine the second measure of oil and balsamic vinegar in a large bowl and season with salt and pepper. Add the orange, onion, radish, carrot, mesclun and almonds to the dressing and toss to combine.
TO SERVE
Divide the smoky mac'n'cheese between plates and sprinkle over the parsley. Serve with the salad on the side.
