Preheat oven to 220 °C or 200 °C fan bake. Line an oven tray with baking paper.
Marinate chicken
In a medium-sized bowl combine ½ cup Greek yoghurt, 1 egg and a pinch of salt. Pat 500 g chicken breast dry then slice into strips. Season with salt and pepper. Add the chicken to the yoghurt mixture and turn to coat. Set aside to marinade.
Season chicken
Combine ½ cup flour, ¼ cup cornflour and 2 tbsp Southern style seasoning in a shallow bowl. Drizzle over 2 tbsps of the marinade, then use your fingers to mix through to form lumps.
Cook chicken
Heat ¼ cup olive oil in a large deep frypan on medium-high heat. Pick up a piece of chicken, let excess marinade drip off, then press to coat in the flour mixture, then shake off excess. Fry the chicken for 2-3 minutes on each side or until golden and cooked through. Repeat the process until all the chicken is cooked. Set aside on a paper towel to drain.
Prep fillings
Thinly slice 1 baby cos lettuce, ¼ cabbage and 2 gherkins. Dice 2 tomato.
Warm tortillas
Place 8 mini tortillas or 4 large on a plate and microwave for about 1 minute to warm.Tip: If you like your tortillas crispy, heat a large frypan and cook the tortillas for 1-2 minutes on each side, or until crispy and golden.
To serve
Smear the mayonnaise on the base of the warm tortillas, then pile the lettuce, cabbage, gherkins, tomatoes and Southern-fried chicken on top.
