Instructions
Before you start
Preheat the oven to 200 °C fan bake. Line an oven tray with baking paper then place an oven rack on the oven tray and spray the rack with oil spray. Bring a steamer pot of hot tap water to a boil.
Prep drumsticks
Peel and mince 2 cloves garlic. Grate the zest of 1 lemon, then slice it into wedges. In a large bowl whisk to combine the garlic, lemon zest, 3 tbsp olive oil and ¼ cup Southern style seasoning. Place 1 kg chicken drumsticks in the bowl and toss until well coated.
Cook drumsticks
Place each drumstick on the prepared oven rack, and keep them in a single layer with just a little space between each. Bake in the oven for 45 minutes or until cooked through.Tip: Time will vary depending on the size of the drumsticks.
Cook potatoes
Meanwhile, peel and dice 600 g potato into small chunks. When the drumsticks have 20 minutes of cooking time remaining, cook the potato in the steamer pot of boiling water for 12-15 minutesuntil tender. Transfer to a large bowl and reserve the steamer pot with water. Add 1 tbsp olive oil, 1 tsp onion powder and ¼ cup milk and season with salt and pepper. Mash until smooth.
Cook broccoli
Bring the reserved steamer pot of water back to a boil - add more hot tap water if needed. Slice ½ broccoli and ½ cauliflower into florets. Add the broccoli,cauliflower and 1 cup grean beans to the steamer pot and cook for 8 minutes. Season with salt and pepper.
To serve
Divide the Southern style chicken drumsticks, potato mash and steamed vegetables between plates. Serve with tomato sauce on the side for dipping.
