Southern style chicken with apple slaw & ciabatta croutons

Ingredients

Chicken

  • 500 g Chicken thighs skinless, boneless
  • 125 g Greek yoghurt
  • 2 tbsp Southern style seasoning
  • 1 Oil spray

Croutons

  • 2 Ciabatta buns or gluten free buns

Slaw

  • 1 bunch Parsley
  • 2 Apple
  • 60 g Baby spinach
  • 30 g Mayonnaise
  • 15 ml Olive oil
  • 120 g Slaw mix

Instructions

Before you start

  • Preheat oven to 240°C or 200°C fan-forced. Line two oven trays with baking paper.

Prep chicken

  • Slice any thicker bits of chicken in half and trim any fat. Put the yoghurt into a shallow bowl and the Southern-style seasoning in a separate bowl or plate. Coat the chicken in the yoghurt, then press into the seasoning, until coated. Then lay on one of the prepared oven trays.

Cook chicken

  • Spray the chicken with oil and season with salt and pepper. Bake in the oven for 20-22 mins, or until chicken is cooked through (when no longer pink inside).

Make croutons

  • Slice the ciabatta buns into 1 cm chunks. Place ciabatta chunks on the remaining prepared oven tray. Bake for 8-10 mins, or until croutons are golden. Set aside to cool.

Make slaw

  • Finely chop the parsley, discarding the stems. Meanwhile, thinly slice the apple, discarding the core. Roughly chop the spinach leaves. In a large bowl, combine parsley, mayonnaise, oil and a splash of water. Add the slaw mix, apple, spinach and slightly cooled croutons. Season with salt and pepper and toss to coat.

To serve

  • Divide the apple slaw with ciabatta croutons between plates. Top with the Southern style chicken.
