Southern style chicken with apple slaw & ciabatta croutons

500gChicken thighsskinless, boneless
125gGreek yoghurt
2tbspSouthern style seasoning

2Ciabatta bunsor gluten free buns

2Apple
60gBaby spinach
30gMayonnaise
15mlOlive oil
120gSlaw mix
Instructions
Before you start
Preheat oven to 240°C or 200°C fan-forced. Line two oven trays with baking paper.
Prep chicken
Slice any thicker bits of chicken in half and trim any fat. Put the yoghurt into a shallow bowl and the Southern-style seasoning in a separate bowl or plate. Coat the chicken in the yoghurt, then press into the seasoning, until coated. Then lay on one of the prepared oven trays.
Cook chicken
Spray the chicken with oil and season with salt and pepper. Bake in the oven for 20-22 mins, or until chicken is cooked through (when no longer pink inside).
Make croutons
Slice the ciabatta buns into 1 cm chunks. Place ciabatta chunks on the remaining prepared oven tray. Bake for 8-10 mins, or until croutons are golden. Set aside to cool.
Make slaw
Finely chop the parsley, discarding the stems. Meanwhile, thinly slice the apple, discarding the core. Roughly chop the spinach leaves. In a large bowl, combine parsley, mayonnaise, oil and a splash of water. Add the slaw mix, apple, spinach and slightly cooled croutons. Season with salt and pepper and toss to coat.
To serve
Divide the apple slaw with ciabatta croutons between plates. Top with the Southern style chicken.
