Chicken
1red onion
1.2kgchicken nibbles(or drumsticks, but will take longer to cook)
Rice
1cupjasmine rice
1cupfrozen peas
Greens
1broccoli
1cupedamame beansor frozen green beans
To serve
1tbspsesame seedsoptional
Instructions
Before you start
Preheat the oven to 220 °C fan bake. Spray a baking dish with oil spray. Bring a steamer pot of hot tap water to a boil.
Make sauce
Peel and mince 4 cloves garlic. In a small bowl whisk together garlic, 1 tsp cornflour, 4 tbsp honey, ¼ cup soy sauce, 1 tbsp apple cider vinegar, 2 tsp sesame oil and a grind of black pepper.
Cook chicken
Peel and slice 1 red onion into wedges. Add 1.2 kg chicken nibbles and red onion to the prepared baking dish and pour over the sauce. Bake, turning regularly to coat in marinade, for 30-35 minutes or until the chicken nibbles are browned and cooked through.
Cook rice
In a large pot over high heat add 1 cup jasmine rice and 310ml or 1¼ cup of water. Bring to a boil then reduce heat to medium or medium-low and cover. Simmer for 12 minutes or until water is absorbed. When the rice has 4 minutes of cooking time remaining, stir in 1 cup frozen peas. Fluff rice and peas with a fork.
Cook greens
Slice 1 broccoli into florets. Add broccoli and 1 cup edamame beans to the steamer pot of boiling water and cook for 4 minutes, until tender or cooked to your liking.
To serve
Divide the pea rice, sticky honey soy chicken nibbles and steamed greens between plates. Drizzle over any remaining sauce and garnish with 1 tbsp sesame seeds.
