Ingredients
Potatoes
- 800 g baby potatoes
- 1 tbsp / 15 ml olive oil
Pork
- ¼ cup / 52 g cornflour
- 2 eggs
- ½ cup / 30 g panko breadcrumbs or gluten-free breadcrumbs
- 500 g pork schnitzel or pork steak
- 1 tbsp / 15 ml olive oil
Slaw
- 2 apples
- 2 cups / 240 g slaw
- 1 tbsp / 15 ml apple cider vinegar
- 1 tbsp / 15 ml olive oil
To serve
- ¼ cup / 70 g barbecue sauce
Instructions
Before you start
- Preheat the oven fan grill. Bring a steamer pot of hot tap water to the boil. Line an oven tray with baking paper.
Cook potatoes
- Cut the unpeeled 800 g baby potatoes into large chunks. Cook potato in the steamer pot for 12-15 minutes until just tender. Then place potatoes on the prepared tray and lightly crush them with a fork or the bottom of a cup. Drizzle with 1 tbsp olive oil, season with salt and pepper and grill for 10 minutes, or until golden and crispy.
Prep pork
- Pat 500 g pork schnitzel dry. Add ½ cup panko breadcrumbs to a plate or shallow bowl. Whisk 2 eggs in a separate shallow bowl and add ½ cup panko breadcrumbs to a separate plate. Coat the pork in ¼ cup cornflour, then dip into the egg and then firmly press into the breadcrumbs to coat.Tip: If you don't have schnitzel, place your hand flat on top of the pork steak and slice through horizontally.
Cook pork
- Heat 1 tbsp olive oil in a large frypan over high heat. Cook the pork schnitzel (in batches if needed) for 2-3 minutes on each side or until golden and cooked through. Transfer to a paper towel-lined plate.
Make slaw
- Thinly slice or julienne 2 apples into sticks. Combine apple, 2 cups slaw, 1 tbsp apple cider vinegar and 1 tbsp olive oil in a large bowl. Season to taste with salt and pepper.
To serve
- Divide apple slaw, crushed potatoes and pork schnitty between plates. Drizzle the barbecue sauce over the pork.
