Apple pie muesli bars

Equipment

  • 1 Square baking dish
  • Baking paper
  • 1 Large microwave-proof bowl

Ingredients

  • 2 tbsp / 30 ml coconut oil
  • 1 cup quick oats
  • 1 cup rolled oats
  • 2 tbsp chia seeds or 1 egg
  • 1 ½ tsp cinnamon
  • 1 cup / 260 g apple puree or apple sauce
  • 2 tbsp / 48 g honey or maple syrup

Instructions

Before you start

  1. Preheat your oven to 180 °C. Line a square baking dish with baking paper.

Make bars

  1. Melt 2 tbsp coconut oil and 2 tbsp honey in a large microwave-proof bowl in the microwave. Then add 1 cup quick oats, 1 cup rolled oats, 2 tbsp chia seeds, 1 ½ tsp cinnamon, 1 cup apple puree and stir to combine.

Bake bars

  1. Press the mixture into the bottom of the prepared baking dish so that it's an even layer, around 1.5-2cm thick. Bake in the oven for 20-25 minutes or until firm to touch but not hard.

To finish

  1. Allow to cool before slicing into squares.
