Healthier creamy rice pudding

Equipment

  • 1 Large baking dish with lid or foil
  • 1 Medium pot

Ingredients

  • oil spray

Milke & honey

  • 4 cups milk or dairy-free milk
  • cup honey

Pudding

  • ¾ cup medium grain white rice
  • ½ cup sultanas or raisins
  • 2 tsp vanilla extract
  • ¾ tsp cinnamon
  • ½ cup coconut cream or dairy cream

Instructions

Before you start

  1. Preheat oven to 180 °C. Spray a large baking dish with oil spray.

Heat milk & honey

  1. Place 4 cups milk and ⅓ cup honey in a pot over medium-high heat. Bring to a simmer, stirring to melt the honey, until the surface is foamy.
    Tip: Do not boil, it will split.

Make pudding

  1. Place ¾ cup medium grain white rice, ½ cup sultanas, 2 tsp vanilla extract and ¾ tsp cinnamon in the prepared baking dish. Pour over the milk, give it a quick stir, then cover with lid or foil.

Bake pudding

  1. Bake for 1 hour, stirring every 20 minutes to break up the rice that starts to set on the base. After 1 hour, remove from oven and add ½ cup coconut cream. Stir to combine.

To serve

  1. Divide between bowls and serve as is or with a scoop of vanilla ice cream.

Notes

If you use arborio rice, it needs extra liquid. Add 1 cup (250ml) water to the pot with the milk, and cook for 1 hr 20 minutes.
