Sausages with vegetables & gravy tray bake

Equipment

  • 1 universal tray

Ingredients

  • oil spray
  • 700 g potatoes
  • 3 carrots
  • 2 red onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • 1 tsp dried oregano
  • ¼ tsp pepper
  • 1 tsp salt
  • 600 g sausages

Gravy

  • 2 tbsp butter melted
  • 2 ½ tbsp flour or cornflour flour
  • 2 cups beef stock or chicken
  • 1 bunch fresh thyme optional

Instructions

Before you start

  1. Preheat combi steam oven to 180 °C fan bake with 50% steam or level 2 steam. Spray a universal tray or baking dish with oil spray.

Vegetables

  1. Adding to the prepared universal tray as you go, peel and dice 700 g potatoes into 5cm pieces, peel and quarter 3 carrots and 2 red onions, and peel and mince 2 cloves garlic. Drizzle over 2 tbsp olive oil, add 2 tsp dried thyme, 1 tsp dried oregano, ¼ tsp pepper and 1 tsp salt. Toss to coat. Arrange 600 g sausages over the top of the vegetables.

Gravy

  1. In a medium-sized bowl add 2 tbsp butter, 2 ½ tbsp flour, and 2 cups beef stock and stir until combined. Pour down the side of the pan (don't pour over the sausages or veggies).
    Optional: Spray sausages with oil spray

Bake

  1. Place in the oven on shelf level 2 and bake for 25 minutes. Turn sausages. Spray with oil (optional) then bake for a further 20 minutes or until sausages are browned and potatoes are tender.

To serve

  1. Divide the sausages and vegetables with gravy between plates, and garnish with 1 bunch fresh thyme leaves if desired.
