
Southern style chicken with apple slaw & ciabatta croutons

Ingredients
Chicken
- 500 g Chicken thighs skinless, boneless
- 125 g / ½ cup Greek yoghurt
- 2 tbsp Southern style seasoning
- 1 Oil spray
Croutons
- 2 Ciabatta buns or gluten free buns
Slaw
- 1 bunch Parsley
- 2 Apple
- 60 g / ¼ cup Baby spinach
- 30 g / 2 tbsp Mayonnaise
- 15 ml / 1 tbsp Olive oil
- 120 g Slaw mix
Instructions
Before you start
- Preheat oven to 240°C or 200°C fan-forced. Line two oven trays with baking paper.
Prep chicken
- Slice any thicker bits of chicken in half and trim any fat. Put the yoghurt into a shallow bowl and the Southern-style seasoning in a separate bowl or plate. Coat the chicken in the yoghurt, then press into the seasoning, until coated. Then lay on one of the prepared oven trays.
Cook chicken
- Spray the chicken with oil and season with salt and pepper. Bake in the oven for 20-22 mins, or until chicken is cooked through (when no longer pink inside).
Make croutons
- Slice the ciabatta buns into 1 cm chunks. Place ciabatta chunks on the remaining prepared oven tray. Bake for 8-10 mins, or until croutons are golden. Set aside to cool.
Make slaw
- Finely chop the parsley, discarding the stems. Meanwhile, thinly slice the apple, discarding the core. Roughly chop the spinach leaves. In a large bowl, combine parsley, mayonnaise, oil and a splash of water. Add the slaw mix, apple, spinach and slightly cooled croutons. Season with salt and pepper and toss to coat.
To serve
- Divide the apple slaw with ciabatta croutons between plates. Top with the Southern style chicken.
