Southern fried chicken & salad tacos with mayo

Equipment

  • 1 Oven tray
  • Baking paper
  • 1 Medium bowl
  • 1 Shallow bowl
  • 1 Large deep frypan

Ingredients

Marinate chicken

  • ½ cup / 125 g Greek yoghurt
  • 1 egg
  • 500 g chicken breast boneless, skinless

Season chicken

  • ½ cup / 104 g flour or gluten-free flour
  • ¼ cup / 52 g cornflour
  • 2 tbsp Southern style seasoning
  • ¼ cup / 60 ml olive oil

Fillings

  • 1 baby cos lettuce or similar
  • ¼ cabbage
  • 2 gherkins optional
  • 2 tomato

Tortillas

  • 8 mini tortillas or 4 large or gluten-free

To serve

  • ¼ cup / 60 g mayonnaise

Instructions

Before you start

  1. Preheat oven to 220 °C or 200 °C fan bake. Line an oven tray with baking paper.

Marinate chicken

  1. In a medium-sized bowl combine ½ cup Greek yoghurt, 1 egg and a pinch of salt. Pat 500 g chicken breast dry then slice into strips. Season with salt and pepper. Add the chicken to the yoghurt mixture and turn to coat. Set aside to marinade.

Season chicken

  1. Combine ½ cup flour, ¼ cup cornflour and 2 tbsp Southern style seasoning in a shallow bowl. Drizzle over 2 tbsps of the marinade, then use your fingers to mix through to form lumps.

Cook chicken

  1. Heat ¼ cup olive oil in a large deep frypan on medium-high heat. Pick up a piece of chicken, let excess marinade drip off, then press to coat in the flour mixture, then shake off excess. Fry the chicken for 2-3 minutes on each side or until golden and cooked through. Repeat the process until all the chicken is cooked. Set aside on a paper towel to drain.

Prep fillings

  1. Thinly slice 1 baby cos lettuce, ¼ cabbage and 2 gherkins. Dice 2 tomato.

Warm tortillas

  1. Place 8 mini tortillas or 4 large on a plate and microwave for about 1 minute to warm.
    Tip: If you like your tortillas crispy, heat a large frypan and cook the tortillas for 1-2 minutes on each side, or until crispy and golden.

To serve

  1. Smear the mayonnaise on the base of the warm tortillas, then pile the lettuce, cabbage, gherkins, tomatoes and Southern-fried chicken on top.
