
Asian-style crispy chicken burgers with fries, slaw & sweet chilli mayo

Ingredients
Fries
- 800 g potatoes
- 4 cloves garlic
- 1 tbsp / 15 ml olive oil
Chicken
- 500 g chicken thighs skinless, boneless
- 1 tbsp / 15 ml olive oil
- ¼ cup / 15 g panko breadcrumbs or gluten-free breadcrumbs
- 2 tsp Chinese five spice
- 1 tbsp / 15 ml olive oil
Salad
- 2 tbsp / 40 g kewpie mayo
- 2 tbsp / 40 g sweet chilli sauce
- 1 bunch fresh coriander optional
- 120 g Asian slaw mix
Burger buns
- 4 burger buns or gluten-free burger buns
Instructions
Before you start
- Preheat the oven to 210 °C fan bake. Line an oven tray with baking paper.
Make fries
- Thinly slice unpeeled 800 g potatoes into fries. Peel and mince 4 cloves garlic. Toss the fries and garlic with 1 tbsp olive oil and season with salt and pepper. Bake for 20-25 minutes, or until golden and tender.
Cook chicken
- Combine 500 g chicken thighs and 1 tbsp olive oil in a large bowl and stir to coat. Then add 1/4 cup panko breadcrumbs and 2 tsp Chinese five spice and toss to coat. Heat 1 tbsp olive oil in a large frypan over medium-high heat. Cook the chicken for 2-3 minutes each side or until cooked through. Remove from the pan.
Make salad
- In a small bowl combine 2 tbsp kewpie mayo and 2 tbsp sweet chilli sauce. Roughly chop 1 bunch fresh coriander, discarding the stems. Add the coriander and 120 g Asian slaw mix to a large bowl. Add 2-3 teaspoons (or more if desired) of the sweet chilli mayo and toss to coat.
Toast buns
- Slice 4 burger buns into halves. When the fries have 4 minutes of cooking time remaining put the buns on an oven tray cut side up, above the fries and toast for 3-4 minutes, until golden.
To finish
- Spread the bun bases with the remaining sweet chilli mayo. Then fill the buns with some of the slaw, the crispy chicken then the bun top.
To serve
- Divide the Asian-style crispy chicken burgers, fries and the remaining slaw between plates. Serve with your favourite dipping sauce on the side.
