BBQ chicken pizzas with aioli swirl & salad

Equipment

Ingredients

Chicken

  • 500 g chicken breast skinless, boneless
  • ¼ cup Southern style seasoning
  • 1 tbsp / 15 ml olive oil

Pizzas

  • 1 capsicum
  • 1 red onion
  • 1 cup / 100 g cheese
  • ½ cup / 140 g barbecue sauce or pizza sauce
  • 2 pizza bases or gluten free pizza bases
  • ½ cup / 75 g frozen corn
  • 2 tbsp / 30 g garlic aioli

Salad

  • 1 cos lettuce
  • 1 cucumber
  • 2 tomato
  • 1 tbsp / 15 ml balsamic vinegar

Instructions

Before you start

  1. Preheat oven to 220 °C or 200 °C fan bake. Line the oven trays with baking paper and preheat them in the oven.

Prep & cook chicken

  1. Pat 500 g chicken breast dry and cut into steaks. Place your hand flat on top of the chicken and slice through horizontally. Toss in a bowl with¼ cup Southern style seasoning until well coated. Season with salt and pepper. Heat 1 tbsp olive oil in a frypan on medium-high heat. Cook chicken for about 3-4 minutes on each side, or until just cooked through. Set aside to rest, then thinly slice or dice into 1cm cubes.

Make pizzas

  1. Thinly slice or dice 1 capsicum. Peel and thinly slice 1 red onion. Grate 1 cup cheese. Divide ½ cup barbecue sauce between 2 pizza bases and spread out evenly using the back of a spoon. Top with capsicum, onion, ½ cup frozen corn, and chicken and sprinkle over the cheese. Season with salt and pepper.

Cook pizzas

  1. Divide pizzas between each preheated tray and cook for 10-14 minutes, or until bases are crisp and golden around the edges. Swap trays halfway through cooking time to ensure even cooking.

Make salad

  1. Thinly slice 1 cos lettuce and 1 cucumber. Cut 2 tomato into wedges. In a medium bowl, combine lettuce, cucumber, tomato and 1 tbsp balsamic vinegar. Season with salt and pepper.

To finish

  1. Once pizzas are cooked, add a swirl of garlic aioli to each pizza and then slice.

To serve

  1. Divide the BBQ chicken pizzas with aioli swirl between plates. Serve the salad on the side.
