Preheat oven to 220 °C or 200 °C fan bake. Line the oven trays with baking paper and preheat them in the oven.
Prep & cook chicken
Pat 500 g chicken breast dry and cut into steaks. Place your hand flat on top of the chicken and slice through horizontally. Toss in a bowl with¼ cup Southern style seasoning until well coated. Season with salt and pepper. Heat 1 tbsp olive oil in a frypan on medium-high heat. Cook chicken for about 3-4 minutes on each side, or until just cooked through. Set aside to rest, then thinly slice or dice into 1cm cubes.
Make pizzas
Thinly slice or dice 1 capsicum. Peel and thinly slice 1 red onion. Grate 1 cup cheese. Divide ½ cup barbecue sauce between 2 pizza bases and spread out evenly using the back of a spoon. Top with capsicum, onion, ½ cup frozen corn, and chicken and sprinkle over the cheese. Season with salt and pepper.
Cook pizzas
Divide pizzas between each preheated tray and cook for 10-14 minutes, or until bases are crisp and golden around the edges. Swap trays halfway through cooking time to ensure even cooking.
Make salad
Thinly slice 1 cos lettuce and 1 cucumber. Cut 2 tomato into wedges. In a medium bowl, combine lettuce, cucumber, tomato and 1 tbsp balsamic vinegar. Season with salt and pepper.
To finish
Once pizzas are cooked, add a swirl of garlic aioli to each pizza and then slice.
To serve
Divide the BBQ chicken pizzas with aioli swirl between plates. Serve the salad on the side.
