
Beef & lasagne soup with parmesan cheese & sour cream

Ingredients
Prep ingredients
- 2 cloves Garlic
- 1 Brown onion
- 50 grams Parmesan cheese
- 1 bunch Basil leaves optional
Beef
- 2 tsps Olive oil
- 450 grams Beef mince premium
- 400 grams Tomato passata or pasta sauce
- 1 litre Chicken stock
- 2 tsps Basil
- 2 tsps Oregano
- 1 tbsp Balsamic vinegar
Lasagna
- 300 grams Lasagna pasta
- 125 grams Sour cream
Instructions
Prep ingredients
- Bring a large pot of salted water to a boil. Peel and mince the garlic. Peel and finely dice the onion. Grate the parmesan cheese. Pick the leaves of the basil (if using).
Cook beef
- Heat oil in a large frypan on medium-high heat. Add the onion and garlic and cook for 1-2 mins, until softened. Then add the beef mince and cook for 3-4 mins, until browned. Then add the tomato passata, chicken stock, basil, oregano, and balsamic vinegar and stir to combine. Season with salt and pepper.
Cook lasagna
- Add the lasagna pasta to the pot of boiling water and cook according to the packet directions, or until the pasta is al dente. Drain and add the cooked lasagna pasta to the mince mixture and gently stir to combine.
To serve
- Divide the beef and lasagna soup between bowls. Sprinkle over parmesan cheese, top with a dollop of sour cream and some fresh basil leaves (if using).
