300gramsLasagna pasta
125gramsSour cream
Instructions
Prep ingredients
Bring a large pot of salted water to a boil. Peel and mince the garlic. Peel and finely dice the onion. Grate the parmesan cheese. Pick the leaves of the basil (if using).
Cook beef
Heat oil in a large frypan on medium-high heat. Add the onion and garlic and cook for 1-2 mins, until softened. Then add the beef mince and cook for 3-4 mins, until browned. Then add the tomato passata, chicken stock, basil, oregano, and balsamic vinegar and stir to combine. Season with salt and pepper.
Cook lasagna
Add the lasagna pasta to the pot of boiling water and cook according to the packet directions, or until the pasta is al dente. Drain and add the cooked lasagna pasta to the mince mixture and gently stir to combine.
To serve
Divide the beef and lasagna soup between bowls. Sprinkle over parmesan cheese, top with a dollop of sour cream and some fresh basil leaves (if using).
