Moroccan crumbed haloumi with honey roasties salad & sweet chilli mayo

Ingredients

Roasties

  • 400 g pumpkin
  • 400 g sweet potatoes
  • 400 g potatoes
  • 2 carrot
  • 1 tbsp / 15 ml olive oil
  • 1 tbsp honey
  • 1 tbsp / 15 ml balsamic vinegar
  • 1 cup / 80 g baby spinach

Haloumi

  • 200 g haloumi cheese
  • 2 tbsp / 26 g flour or gluten-free flour
  • ½ cup / 30 g panko breadcrumbs or gluten-free breadcrumbs
  • 1 tbsp Moroccan seasoning
  • 1 egg
  • 1 tbsp / 15 ml olive oil

To finish

  • ¼ cup / 80 g mayonnaise
  • 2 tbsp / 40 g sweet chilli sauce

Instructions

Before you start

  1. Preheat the oven to 220 °C or 200 °C fan bake. Line an oven tray with baking paper.

Prep roasties

  1. Dice the unpeeled 400 g sweet potatoes, 400 g potatoes, 2 carrot and the peeled 400 g pumpkin into 2cm chunks.

Cook roasties

  1. Put them on the prepared oven tray, drizzle with 1 tbsp olive oil, season with salt and pepper and toss to coat. Roast for 20-22 minutes or until golden and tender. Once cooked, drizzle over 1 tbsp honey, 1 tbsp balsamic vinegar and add 1 cup baby spinach and toss to combine.

Prep haloumi

  1. Meanwhile, sprinkle 2 tbsp flour over 200 g haloumi cheese and toss to coat. Mix ½ cup panko breadcrumbs and 1 tbsp Moroccan seasoning on a plate. Whisk 1 egg in a small bowl. Dip the haloumi into the egg, then place it into the breadcrumbs and press, turning to coat well.

Cook haloumi

  1. Heat 1 tbsp olive oil in a large frypan on medium-high heat. Add the crumbed haloumi and cook for 2-3 minutes on each side or until golden and crispy. Set aside on a paper towel to drain before dicing into cubes.

To finish

  1. In a second small bowl combine ¼ cup mayonnaise and 2 tbsp sweet chilli sauce.

To serve

  1. Divide the honey roasties salad between plates and top with the Moroccan crumbed haloumi. Serve with sweet chilli mayo on the side for dipping.
