Savoury beef & veggie sloppy joes with garden salad

Ingredients

  • 1 Carrot
  • 2 cloves Garlic
  • 1 Brown onion
  • 50 grams Cheese grated
  • 2 tsp Olive oil first
  • 2 tsp Barbecue seasoning
  • 450 gram Beef mince premium
  • 3 tbsp Tomato sauce
  • 2 tbsp Worcestershire sauce
  • 250 mls Beef stock
  • 1 cup Peas
  • 4 Burger Buns brioche etc
  • 1 Green lettuce romaine, cos, iceberg etc
  • 250 grams Cherry tomatoes
  • 1 cup Corn
  • 1 tbsp Mayonnaise

Instructions

PREP VEGGIES

  1. Preheat the oven to 180°C, fan-forced. Line an oven tray with baking paper. Finely dice the carrot. Peel and mince the garlic. Peel and finely dice the onion. Roughly grate the cheese.

COOK BEEF

  1. Heat the oil in a medium-deep frypan over medium-high heat. Add the onion, carrot, garlic and barbecue seasoning, and cook, stirring regularly, for 4-5 mins, until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 4-5 mins, until browned.

COOK SAUCE

  1. Stir the tomato sauce, Worcestershire sauce and beef stock into the beef mixture and bring to a simmer. Reduce the heat to medium-low and cook, covered, for 5 mins. Stir in the peas and cook, covered, for a further 4-5 mins, until the carrot is tender and the sauce is slightly thickened. Season to taste with salt and pepper.

TOAST BUNS

  1. Slice the buns in half and place the cut side up on an oven tray. Bake for 4-5 mins, until lightly toasted and golden. Remove the bun tops, divide the beef mixture between the bun bottoms and sprinkle with half the cheese. Bake a further 2-3 mins, or until the cheese is lightly melted.

MAKE SALAD

  1. Finely slice the lettuce or tear the leaves into bits. Slice the cherry tomatoes in half. Drain the corn. Add all the ingredients to a large bowl along with the remaining cheese and toss with the mayonnaise. Season with salt and pepper.

TO SERVE

  1. Divide the savoury beef & veggie sloppy joes between plates. Serve the garden salad on the side.
