Savoury beef & veggie sloppy joes with garden salad

Ingredients

  • 1 Carrot
  • 2 cloves Garlic
  • 1 Brown onion
  • 50 grams Cheese grated
  • 2 tsp Olive oil first
  • 2 tsp Barbecue seasoning
  • 450 gram Beef mince premium
  • 3 tbsp Tomato sauce
  • 2 tbsp Worcestershire sauce
  • 250 mls Beef stock
  • 1 cup Peas
  • 4 Burger Buns brioche etc
  • 1 Green lettuce romaine, cos, iceberg etc
  • 250 grams Cherry tomatoes
  • 1 cup Corn
  • 1 tbsp Mayonnaise

Instructions

PREP VEGGIES

  • Preheat the oven to 180°C, fan-forced. Line an oven tray with baking paper. Finely dice the carrot. Peel and mince the garlic. Peel and finely dice the onion. Roughly grate the cheese.

COOK BEEF

  • Heat the oil in a medium-deep frypan over medium-high heat. Add the onion, carrot, garlic and barbecue seasoning, and cook, stirring regularly, for 4-5 mins, until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 4-5 mins, until browned.

COOK SAUCE

  • Stir the tomato sauce, Worcestershire sauce and beef stock into the beef mixture and bring to a simmer. Reduce the heat to medium-low and cook, covered, for 5 mins. Stir in the peas and cook, covered, for a further 4-5 mins, until the carrot is tender and the sauce is slightly thickened. Season to taste with salt and pepper.

TOAST BUNS

  • Slice the buns in half and place the cut side up on an oven tray. Bake for 4-5 mins, until lightly toasted and golden. Remove the bun tops, divide the beef mixture between the bun bottoms and sprinkle with half the cheese. Bake a further 2-3 mins, or until the cheese is lightly melted.

MAKE SALAD

  • Finely slice the lettuce or tear the leaves into bits. Slice the cherry tomatoes in half. Drain the corn. Add all the ingredients to a large bowl along with the remaining cheese and toss with the mayonnaise. Season with salt and pepper.

TO SERVE

  • Divide the savoury beef & veggie sloppy joes between plates. Serve the garden salad on the side.
