Ingredients
Granola
- 300 g Lo sugar natural muesli The Care Fillery - New World
- ¼ cup Coconut flakes or desiccated coconut
- ¼ tsp Cinnamon
- 30 ml / 2 tbsp Coconut oil melted
- 10 ml / 2 tsp Vanilla extract
To finish
- 60 ml / ¼ cup Maple syrup
- ¼ cup Sultanas
- ¼ cup Cranberries
- ¼ cup Dried apricots
Instructions
Before you start
- Preheat the oven to 180℃. Line a baking tray with baking paper.
Toast granola
- In a large bowl combine Lo sugar natural muesli, cinnamon, coconut oil and vanilla extract. Spread the mixture out evenly on the prepared baking tray and bake for 5 minutes, then stir and bake a further 5 minutes or until golden.
To finish
- Roughly chop the dried apricots. Remove the granola from the oven, drizzle over the maple syrup then add the sultanas, cranberries and dried apricots and carefully stir to combine. Leave to cool completely before storing in an air-tight container.
