Tzatziki & lamb burgers with sweet potato & cucumber salad

Ingredients

  • 400 grams Sweet potato
  • 2 tsp Olive oil first
  • 4 cloves Garlic
  • 1 Red onion
  • 2 bunch Mint leaves
  • 500 grams Lamb mince or lamb sausages
  • 1 tbsp Coriander
  • 1 tsp Dijon mustard
  • 2 tsp Olive oil second
  • 1 Cucumber
  • 125 grams Greek yoghurt
  • 1 tbsp Lemon juice
  • 1 tbsps Olive oil third
  • 1 bunch Fresh dill or dried (optional)
  • 4 Burger buns brioche etc
  • 120 grams Mesclun salad

Instructions

PREP & COOK SWEET POTATO

  1. Preheat oven to 220°C or 200°C fan-bake. Dice the sweet potato into 1cm cubes. Toss on an oven tray with the first measure of oil, season with salt and pepper and toss to combine. Roast in the oven for 15-20 mins, until golden and tender.

PREP & COOK PATTIES

  1. Peel and mince the garlic. Pick the mint leaves and finely chop them. Peel the grate the onion into a large bowl, then mix in the lamb mince, half the garlic, half the chopped mint, ground coriander, and Dijon mustard. Form the mixture into 4 burger patties, then heat the second measure of oil in a large frypan on medium-high heat. Cook patties for 3-4 mins on each side, until cooked through.

MAKE TZATZIKI

  1. Meanwhile, finely grate half the cucumber, then place it in a towel and gently squeeze out a bit of the excess water. In a small bowl, combine the cucumber, yoghurt, lemon juice, the third measure if oil, remaining garlic, salt, dill (if using), and remaining mint. Chill until ready to use.

TOAST BUNS & MAKE SALAD

  1. Slice the buns in half, and place them on a baking tray cut side up. Grill for 2-3 mins, or until golden brown. Dice the remaining half of the cucumber into 1cm cubes and add it to a large bowl with mesclun salad, toss to combine.

ASSEMBLE BURGERS & FINISH SALAD

  1. Spread the cut side of the buns with the Tzatziki dressing. Divide the lamb patties and half the salad among the bun bases, then sandwich with the bun tops. Add the roasted sweet potato to the remaining salad and toss to combine.

TO SERVE

  1. Divide the Tzatziki & lamb burgers between plates with the remaining sweet potato and cucumber salad on the side. Drizzle over any remaining Tzatziki dressing.
