BBQ, cheese & pork loaded sweet potato fries with BBQ mayo swirl

Instructions
Before you start
Preheat the oven to 220℃ or 210℃ fan bake. Line an oven tray with baking paper.
Cook fries
Slice the unpeeled 800 g sweet potatoes and 2 parsnip into 1cm fries. Place on the prepared oven tray and drizzle with 1 tbsp olive oil, sprinkle over 1 tbsp barbecue seasoning and season with salt and pepper. Toss to combine. Bake in the oven for 20-25 minutes, or until golden and tender.
Cook pork
Heat 1 tbsp olive oil in a frypan over medium-high heat. Add 600 g pork mince and cook, breaking up the lumps with a spoon for 3-4 minutes. Then add ¼ cup barbecue sauce, and ¼ cup tomato paste and crumble in 1 cube chicken stock. Stir to combine, and continue cooking for 5-8 minutes, until slightly reduced and thickened. Toss 1 cup baby spinach through and cook a further 1 minute, until wilted.
Melt cheese
When the fries have finished cooking, remove them from the oven. Carefully spread the pork mixture over top, and grate over 100 g cheddar cheese. Return to loaded fries to the oven, and cook for 4-5 minutes until the cheese is melted and golden.
To finish
Thinly slice 1 spring onion (if using). Combine 2 tbsp barbecue sauce and ¼ cup mayonnaise in a small bowl.
To serve
Serve the BBQ, cheese and pork loaded fries on the tray at the table for everyone to help themselves, or divide between plates. Drizzle the BBQ mayo swirl over top and sprinkle over the spring onion (if using).
