Instructions
PREP & ROAST VEGGIES
Preheat the oven to 220°C bake or 200°C fan bake. Wash and dice the unpeeled potatoes into 2 cm cubes. Wash and slice the carrot into 2cm thick rounds. Peel and dice the pumpkin into 2cm thick cubes. Place the veggies on a lined baking tray in a single layer, spray with oil and season with salt and pepper. Bake in the oven for 15-20 mins, or until tender and cooked.
PREP CARAMELISED ONION
Peel and halve the onion, then thinly slice. Heat the first measure of oil on a large frypan over medium-high heat. Add the onion and cook, stirring for 3 minutes or until the onion starts to soften. Add maple syrup and balsamic vinegar and cook, stirring occasionally, for a further 5 mins, or until dark golden and caramelised.
COOK STEAK
Meanwhile, heat the second measure of oil in a large frypan over high heat. Season the steaks with salt and pepper and cook, 2-4 mins each side, or until cooked to your liking. Remove from heat and set aside to rest. Bring a steamer pot of water to boil for the broccoli.
PREP GRAVY
Sprinkle the flour over the caramelised onion and cook, stirring constantly for 1 min. Stirring constantly, gradually add the stock then add the mustard to the onion mixture and bring to a boil. Reduce heat to low and cook, stirring occasionally, for 5 mins, or until slightly thickened.
COOK GREENS & FINISH GRAVY
Add the broccoli to the steamer pot of boiling water and steam for 3-4 minutes, until tender. Very thinly slice the beef and add along with any resting juices to the thickened onion gravy mixture. Stir to combine, then remove from heat.
TO SERVE
Divide the beef and caramelised onion gravy between plates with roasties and broccoli on the side.
