Instructions
Cook patties
Preheat the oven to 200°C, fan-forced. Oven bake the veggie patties according to packet directions.
Make salad
Meanwhile, put the oil and balsamic vinegar in a large bowl, season with salt and pepper and stir to combine. Peel the carrot into ribbons with a vegetable peeler. Slice the tomato. Add the carrot, tomato, and mixed green salad to the dressing and toss to combine.
Toast buns
Halve the ciabatta buns through the middle. When the veggie patties have 4 mins cooking time remaining put the buns, cut-side up on another oven tray. Bake until lightly toasted.
To serve
Spread the cut side of the buns with the burger sauce. Divide the veggie patties and half the salad among the bun bases, then sandwich with the bun tops. Serve with the remaining salad on the side.
