Lamb stuffed Arayes with salad & yoghurt

Ingredients

Filling

  • 1 brown onion
  • 2 cloves garlic
  • 1 bunch parsley
  • 500 g lamb mince or beef mince
  • 2 tsp dried coriander
  • 2 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp paprika
  • ½ tsp chilli Powder optional

Pitas

  • 6 pitas or gluten-free pitas
  • oil spray

Salad

  • ½ iceberg lettuce
  • 2 tomato
  • 50 g cheese
  • ½ cup Greek yoghurt

Instructions

Before you start

  • Preheat the oven to 180 °C °C or 160 °C °C fan bake. Line a baking tray with baking paper.

Prep filling

  • Adding to a large bowl as you go - peel and grate 1 brown onion. Peel and mince 2 cloves garlic. Roughly chop 1 bunch parsley. Then add 500 g lamb mince, 2 tsp dried coriander, 2 tsp cumin, 1 tsp cinnamon, 1 tsp paprika, ½ tsp chilli Powder (if using) and salt and pepper. Use clean damp hands to combine the mixture together well.

Cook pitas

  • Slice 6 pitas in half. Evenly stuff each pita pocket with the meat mixture. Place the pitas on the lined baking tray. Spray both sides of the pitas with oil spray and bake for 20 minutes, flipping halfway through.

Make salad

  • Meanwhile, slice ½ iceberg lettuce and 2 tomato. Grate 50 g cheese. Put ½ cup Greek yoghurt in a small bowl.

To serve

  • Serve the warm lamb stuffed Arayes with salad on the side & yoghurt for dipping.
