Bring ¼ cup honey and ¼ cup coconut oil to a boil and slightly thicken in a large pot (you can also microwave in a large microwave-proof bowl). Remove from the heat and add ½ cup peanut butter, being careful not to cook the peanut butter, just melt it. Then add 1 tsp vanilla extract, 2 cups rice bubbles and 1 cup oats and stir until well combined.Tip: Don't overcook the peanut butter or the slice will be crumbly.
To finish
Line a square baking dish with baking paper. Add the bar mixture and firmly press to line the bottom of the dish. Set in the fridge for 4 hours or overnight before slicing into bars.
