Peanut butter & honey rice bubble bars

  • 1 Large pot
  • 1 Square baking dish
  • Baking paper

Ingredients

  • ¼ cup honey or maple syrup
  • ¼ cup coconut oil
  • ½ cup peanut butter
  • 1 tsp vanilla extract
  • 2 cups rice bubbles
  • 1 cup oats

Instructions

Make bars

  • Bring ¼ cup honey and ¼ cup coconut oil to a boil and slightly thicken in a large pot (you can also microwave in a large microwave-proof bowl). Remove from the heat and add ½ cup peanut butter, being careful not to cook the peanut butter, just melt it. Then add 1 tsp vanilla extract, 2 cups rice bubbles and 1 cup oats and stir until well combined.
    Tip: Don't overcook the peanut butter or the slice will be crumbly.

To finish

  • Line a square baking dish with baking paper. Add the bar mixture and firmly press to line the bottom of the dish. Set in the fridge for 4 hours or overnight before slicing into bars.

Notes

You could also sprinkle over hundreds and thousands!
