Preheat the oven to 200°C fan-bake. Wash and halve the unpeeled potatoes, quartering any large ones. Cut the unpeeled pumpkin into 5cm chunks. Slice the courgette and carrot in half lengthways then slice into 2cm thick. Peel and mince the garlic.
BAKE VEGGIES AND SAUSAGES
Put the potato, pumpkin, courgette, carrot, garlic, sausages, chutney, and oil in the roasting pan. Season with salt and pepper and toss until they are all coated in the relish and garlic. Then spread the sausages and vegetables in a single layer. Bake for 30 mins, or until the vegetables are browned and tender and the sausages are cooked through.
FINISH TRAY BAKE
Finely chop the parsley. Crumble the feta cheese over the sausages and vegetables, then sprinkle with the parsley.
TO SERVE
Divide the pork sausage & veggie tray bake with feta cheese between plates.
